Now you can find in New Zealand the plantain, cambur, topocho, 'Plátano maduro' or guineo, whatever it is called in different countries of Latin America and depending on its maturation, is an exquisite that brings an exotic and unique touch to Latin dishes, in its mature state, it has usually yellow skin with black spots, the ripe plantain in slices allows its cooking to be faster and it is also perfect to decorate each meal.

You can try it either roasted, fried, or grilled because in any way you will experience a delicious latin dish, being perfect as snack, tapa or entree. Plantain is a very flexible food and in slices like this it’s even easier to prepare and mix.

For pan-frying:

 

  • Remove the frozen ripe plantains from the freezer and let them thaw at room temperature for about 15-30 minutes.
  • Slice the plantains into your desired thickness. You can slice them diagonally or straight, depending on your preference.
  • Heat a non-stick frying pan or skillet over medium heat.
  • Add a tablespoon of oil or butter to the pan and let it heat up.
  • Once the oil or butter is hot, add the sliced ripe plantains to the pan in a single layer, ensuring they are not overcrowded.
  • Cook the plantains for about 2-3 minutes on each side, or until they are golden brown and caramelized.
  • Use a spatula to flip the plantains halfway through cooking to ensure even browning.
  • Once the plantains are cooked to your desired level of caramelization and tenderness, remove them from the pan and place them on a plate lined with paper towels to drain any excess oil.
  • Serve the cooked ripe plantains hot as a delicious side dish or snack.

 

 

For Air Fryer:

  • Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
  • Remove the frozen ripe plantains from the freezer and let them thaw at room temperature for about 15-30 minutes.
  • Slice the plantains into your desired thickness. You can slice them diagonally or straight, depending on your preference.
  • Place the sliced ripe plantains in the air fryer basket in a single layer, ensuring they are not overcrowded.
  • Cook the plantains in the air fryer for about 8-10 minutes, flipping them halfway through cooking, until they are golden brown and caramelized.
  • Once cooked to your desired level of caramelization and tenderness, remove the plantains from the air fryer basket and serve them hot.

 

 

For Oven:

 

  • Preheat your oven to 400°F (200°C).
  • Remove the frozen ripe plantains from the freezer and let them thaw at room temperature for about 15-30 minutes.
  • Slice the plantains into your desired thickness. You can slice them diagonally or straight, depending on your preference.
  • Place the sliced ripe plantains on a baking sheet lined with parchment paper, ensuring they are spaced apart.
  • Bake the plantains in the preheated oven for about 15-20 minutes, flipping them halfway through cooking, until they are golden brown and caramelized.
  • Once cooked to your desired level of caramelization and tenderness, remove the plantains from the oven and serve them hot.
