Panela is unrefined whole cane sugar, typical of Colombia, Central, and Latin America in general, which is a solid form of sucrose derived from the boiling and evaporation of sugarcane juice. Now available in New Zealand. It is a product of 100% natural origin and that is why it is called authentic whole cane sugar.
Although it has a lot of names all over Latin America, panela is the same as the Raspadura, Rapadura, Chancaca, Atado, Dulce, Piloncillo, Empanizao, Panocha and even the Papelón!
